"Hyoutan-age" was introduced in 1985 during the "Lord Date Masamune 350th Anniversary Aoba Festival." It originated from the imaginative drive of artisans who believed, "Selling ordinary fish cakes at a festival isn't thrilling enough; let’s create a new specialty that can be enjoyed one-handed while strolling through the city." Inspired by the "Hyoutan" (gourd)—a Japanese emblem of good fortune—its charming and distinctive appearance generated widespread excitement. Initially available only at festivals, its rapid rise in popularity soon established it as a signature product of the main store. Today, it is recognized across the country as an essential soul food for those exploring Sendai.
